- 3 Chicken breasts (about 500 grams)
- 1 egg
- 1 shallot
- 1 tsp butter
- 2 tsps grated Lemon peel
- 1 day-old kaiser roll
- 1 tsp finely chopped rosemary
- salt
- freshly ground peppers
Preparation steps

Soak bread in lukewarm water. Chop chicken or finely mince. Peel shallot, chop finely and sweat until translucent in 1 tablespoon hot butter, then set aside.

Mix chicken, egg, well squeezed bread, shallot, lemon zest and rosemary. Season with salt and pepper and knead to form a homogeneous dough.
3.
With moistened hands, form about 20 small balls and cook in hot butter and oil mixture in portions on all sides until golden brown. Garnish each by inserting a piece of a sprig of rosemary. Serve warm or cold.
