Preparation steps

1.

Rinse prawns and pat dry. Rinse lime in hot water, wipe dry, squeeze juice from 1 lime and cut second lime into slices. Cut honeydew melon in half, scrape out seeds with a spoon and scoop out small balls with a melon baller. Mix prawns in a bowl with lime juice and pepper.

2.

Arrange melon balls in four glasses and cover with prawns. Serve garnished with lime slices and mint leaves.
