Rinse chicken and pat dry.

Break pretzels into pieces. Pour hot milk over pretzels and add raisins, let rest for about 15 minutes. Peel and chop shallots. Add shallots, egg and parsley to pretzel mixture. Season with salt and pepper and stuff into chicken. Secure with toothpicks or kitchen twine.
Combine paprika, lemon juice, honey and oil. Season with salt and pepper and brush chicken with it. Place on a baking sheet lined with parchment paper. Roast in an oven preheated to 200°C (approximately 390°F) for about 70-80 minutes. Remove from oven, slice and serve with stuffing.
