Preparation steps

1.

Thaw puff pastry and roll out each sheet a little.

2.

Preheat the oven to 200°C (approximately 400°F).

3.

Wipe the mushrooms with paper towels and chop coarsely. Peel the shallots and garlic and chop very finely.

4.

Saute the mushrooms in butter, add shallots and garlic, saute a few minutes more and remove from the heat. Season with salt and pepper and mix in the chopped parsley.

5.

Spread the filling on the pastry. Leave about 3 cm (approximately 1 1/4 inches) of the right, left and top edges free (since the filling is pressed outward by rolling) and roll up lengthwise. Mix the egg yolk with 1 tablespoon water, brush onto the edges and press together to seal.

6.

Brush the rolled pastry with the remaining yolk-water.

7.

Place on a baking sheet lined with parchment paper and bake about 25 minutes, until golden brown. Cut into thick slices and serve lukewarm.
