100 grams ham
250 grams Pumpkin (such as Butternut Squash)
2 eggs
70 milliliters vegetable oil
80 milliliters Vegetable broth

Preparation steps

1.

Line a muffin tin with paper cups. Rub the parmesan.

2.

Mix the flour, baking powder, curry powder and parmesan.

3.

Briefly cook the diced ham in a dry frying pan and drain on paper towels. Cut the pumpkin into very small cubes and mix the pumpkin and ham into the flour mixture.

4.

Mix the eggs, oil, broth and sour cream. Quickly stir into the flour mixture.

5.

Pour the batter into the muffin tin. Bake for 25-30 minutes at 180°C (approximately 350°F), until golden brown. Remove from the oven and serve hot.
