- For dough
- 200 baked, soft Pumpkin
- 1 pinch Chili powder
- 1 egg
- salt
- 350 grams Pastry flour
- For filling
- 150 grams cream cheese
- 100 grams grated Mountain cheese (Min. 12 months old)
- 1 small onion
- 2 sun-dried Tomatoes (chopped)
- 1 egg yolk
- salt
- peppers
- For sauce
- 4 Tbsps butter
- 100 grated Parmesan
- Fresh herbs (for garnish)
Preparation steps

Combine in a bowl pumpkin puree, chile powder, egg, salt and just enough flour to make a pliable dough.

Knead the dough vigorously until smooth. Roll out thinly, about 2 mm (approximately 1/4 inch). Using heart-shaped cookie cutters, cut out approximately 8 large and 40 smaller hearts.

Peel the onion and sauté in butter until soft. Combine cream cheese, mountain cheese, tomato and onion mixture. Season with salt and pepper. Spoon the filling onto the center of half of the heart. Top with the remaining hearts and press edges and around filling firmly to close.

Cook ravioli in boiling salted water for about 5 minutes. Drain.

To serve, melt butter, toss with the ravioli and serve with grated cheese. Garnish with fresh herbs to taste.
