400 grams Chestnuts
1 Hokkaido pumpkin (2 kg)
1 Tbsp vegetable oil
1 Tbsp honey
1 Apple
120 milliliters Vegetable broth
1 Cinnamon stick
salt
freshly ground peppers
1 tsp lemon juice

Preparation steps

1.

Cut shells of chestnuts and cook in salted boiling water for about 30 minutes or until chestnuts are soft. Drain, cool slightly and peel thoroughly.

Rinse pumpkin, cut into slices and then strips. Saute with chestnuts in hot oil until golden brown, or about 5 minutes. Drizzle with honey and let caramelize slightly.

Meanwhile, rinse apple, cut in half, remove core and cut halves into slices. Deglaze pumpkin with broth, add apple pieces and stir in cinnamon. Season with salt and pepper, cover and simmer for 20 minutes.

4.

Before serving, drizzle with lemon juice and season with salt and pepper. Garnish with cilantro.
