- 125 grams Candied lemon
- 2 eggs
- 125 grams sugar
- ½ tsp cinnamon
- ¼ tsp cloves
- 1 pinch ground Nutmeg
- 1 pinch Mace (mace)
- 2 drops Bitter almond oil
- 220 grams ground almonds
- 50 grams chopped almonds
- 150 grams powdered sugar
- 2 Tbsps lukewarm milk
- Parchment paper (for the pan)
Preparation steps

Finely chop the candied lemon peel. Beat the eggs and sugar until fluffy. Add the cinnamon, cloves, nutmeg, mace and almond oil. Knead into a smooth dough. Fold in the chopped nuts and lemon peel.

Line the baking sheet with parchment paper. Use a teaspoon to heap portions of the dough onto the baking sheet. Without preheating, bake the gingerbread at 175°C (approximately 350°F) for 15-20 minutes.

Mix the powdered sugar and milk into a thick icing. Spread the icing onto the still warm gingerbread. Let dry and serve.
