- 36 ozs Quince
- 8 ozs Apple juice
- 1 lemon (juice)
- 6 ozs brown sugar
- 1 pc Cinnamon stick
- 2 Star anise
- Star anise (for garnish)
Preparation steps

Wipe quince with a damp cloth, quarter and remove the core. Cut quarters into pieces and place in a pot. Mix with apple juice, lemon juice, sugar, lemon juice, cinnamon and anise and bring to a boil.
Cover and let simmer for about 45 minutes until soft. If necessary add a little water and stir from time. Then remove the spices and pour liquid through a sieve.
Pour into prepared (sterile) glasses, close and boil down to taste or use fresh.
