2 tsps grated Lemon peel (organic)
50 grams Pine nuts
1 Tbsp chopped parsley
200 grams Goat cheese
1 Tbsp Crème fraiche

Preparation steps

1.

Trim radicchio, remove 16 beautiful leaves and spread leaves on the work surface. Cut the thick veins to flatten the leaves. Remove 4 more radicchio leaves and chop them finely. Toast pine nuts in a dry frying pan and finely chop.

2.

Mix goat cheese with creme fraiche, lemon zest, pine nuts, parsley and chopped radicchio. Season with salt and cayenne pepper.

3.

Scoop mixture on the radicchio leaves, leaving an empty margin. Roll leaves, cut crosswise in the middle, set on plates and garnish with additional radicchio leaves.
