1 bunch Radish
1 onion
2 medium sized potatoes
1 Tbsp Corn oil
300 milliliters Vegetable broth
3 Tbsps Sour cream
salt
freshly ground peppers

Preparation steps

1.

Rinse the radishes. Set aside 2 radishes. Coarsely chop the remaining radishes, including the leaves.

Peel and chop the onion.

3.

Peel and dice the potatoes.

4.

Sweat the onion in hot oil until translucent. Add the chopped radishes with the leaves and the potato cubes. Saute briefly and pour in the broth. Cover and simmer for 20 minutes. Puree the contents of the pan and stir in 2 tablespoons of the sour cream. Bring to a boil and season with salt and pepper.

5.

Cut the remaining radishes (including the leaves) into strips.

6.

Distribute the soup into bowls and garnish with the radishes. Serve warm.
