- 250 grams lamb's lettuce
- 4 yellow onion
- 2 Tbsps olive oil
- 150 milliliters dry Red wine
- 2 Tbsps dark balsamic vinegar
- 1 generous pinch Ground clove
- 1 generous pinch allspice
- 1 bay leaf
- salt
- freshly ground peppers
- 2 ripe Pear
- 30 grams butter
- 1 Tbsp powdered sugar
- 100 grams peeled, whole almonds
- 150 grams Roquefort cheese
- Cress (for garnish)
Preparation steps

Rinse mache and spin dry. Peel onions and cut into rings. Heat oil in a pan and sweat onion until glassy. Deglaze with wine. Add vinegar, honey and spices and simmer over medium heat for 15-20 minutes.

Meanwhile, rinse pears and cut or slice lengthwise into thin slices. Melt butter in a pan and cook pears until golden brown. Add powdered sugar and let caramelize slightly. Add nuts let caramelize a little more.

Remove rind from cheese and cut into cubes. Remove pears mixture from the pan and add cheese, let melt. Arrange mache on plate, Add pear mixture, onion mixture and cheese. Serve garnished with watercress.
