4 large Tomatoes (chopped)
1 Cucumber (chopped)
4 Tbsps chopped parsley
2 Tbsps chopped mint
For the dressing
1 clove garlic cloves (crushed)
2 Tbsps lemon juice
4 Tbsps extra virgin olive oil

Preparation steps

1.
Soak the bulgar wheat in warm water for 10-15 minutes to swell before putting it into a sieve to drain.
2.
For the dressing: whisk all the ingredients together until thickened.
3.
Mix the bulgar with the tomatoes, cucumber and herbs and toss the salad with the dressing just before you are ready to serve.
