500 grams Raspberries
80 grams sugar
½ lemon (juice)
2 Tbsps Crème de cassis

Preparation steps

1.

For the ice cream, mix raspberries with sugar, lemon juice and liqueur and puree. (If desired, raspberry puree could be pressed through a strainer or sieve). Pour raspberry mixture into a shallow metal tray and place in the freezer.

2.

When mixture begins to freeze, stir with a fork. Repeat stirring occasionally to prevent the formation of large ice crystals. To serve, scoop ice cream into glasses and serve garnished with fresh raspberries and lemon balm.
