- 1 cup rolled oats
- 1 cup milk
- 1 egg
- 1 cup caster sugar (scant)
- ¼ cup light olive oil
- 1 ¼ cups all-purpose flour
- 2 tsps Baking powder
- ½ tsp baking soda
- 1 cup Raspberries (scant)
- To garnish
- 36 Raspberries
- 6 tsps sieved powdered sugar
Preparation steps
1.
Heat the oven to 190C, (170C fan oven), 375F, gas 5. Line a 12 hole muffin tin with paper cases.
2.
Put the oats into a bowl and add the milk.
3.
In a jug mix togetehr the eggs, sugar and olive oil, to combine.
4.
Sieve the flour, baking powder and baking soda (bicarbonate of soda) into a bowl, then gently stir in the raspberries.
5.
Carefully stir in the egg mixture, then the oats and milk.
6.
Spoon the mixture into the muffin cases.
7.
Bake for 15-20 minutes until well risen and firm.
8.
Cool and garnish each muffin with 3 raspberries, then dust with sieved icing sugar to serve.
