- ½ cup rolled oats (plus extra for sprinkling)
- ½ cup Buttermilk
- ¼ cup butter
- ⅙ cup sugar
- 1 small egg
- ½ cup all-purpose flour
- ½ tsp Baking powder
- ¼ tsp baking soda
- 1 pinch salt
- ¼ cup raisins
- 1 Tbsp light brown sugar
Preparation steps

Mix together the oats and buttermilk and set aside for 1 hour.

Heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in 6 muffin tins.

Beat the butter and sugar in a mixing bowl until light and fluffy. Beat in the egg until blended.
4.
Sift together the flour, baking powder, bicarbonate of soda and the salt. Gently stir into the butter mixture, alternately with the oat mixture. Stir in the raisins.
5.
Spoon into the paper cases and bake for 20-25 minutes, until risen and golden.
6.
Sprinkle with oats and brown sugar, then cool in the tins for 5 minutes and place on a wire rack to cool completely.
