Ingredients

9 ozs mixed Dried bean
3 ozs Orzo
1 tsp dried oregano
1 bay leaf
To make
2 Tbsps olive oil
1 onion (chopped)
2 cloves garlic cloves (crushed)
1 ⅔ cups tomato passata
5 cups vegetable stock
salt (to taste)
peppers (to taste)

Suggested beans to use: black-eyed peas, cannellini beans, pinto beans, kidney beans. Put the orzo in a separate small bag so it can be easily separated.

Preparation steps

1.
For the jar: place the ingredients attractively in a large sealable jar. Seal tightly.

To make: put the beans in a large pan. Add enough water to cover and bring to a boil. Boil for 10 minutes.

Remove from the heat, cover and leave to stand for 1 hour.

Heat the oil in a large pan and cook the onions and garlic for about 10 minutes, until tender. Add the drained beans, oregano, bay leaf passatta and stock and bring to a boil.
5.
Reduce the heat, cover and simmer gently for about 2 hours, until the beans are tender. Add the orzo and cook for a further 10 minutes. Discard the bay leaf and season to taste.
