6 ½ cups Strawberries (chopped)
1 lemon (juice)
4 ½ cups Pectin

The jam will keep for at least 1 year.

Preparation steps

Blend the strawberries to a fine purée and tip into a saucepan. Stir in the lemon juice and jam sugar and bring to the boil, stirring. Boil for around 4 minutes then turn off the heat and scoop off the foam that has formed.

To check that it will set properly, spoon a few drops onto a cold plate. If they set, the jam is ready.
3.
Rinse the jars with hot water and and fill with jam to just below the top. Seal well with a lid and leave to cool.
