- 10 ozs Red Currants
- 3 ½ ozs Strawberries
- 2 Tbsps lemon juice
- 10 ½ ozs Greek Yogurt (0.1% fat)
- 2 ozs powdered sugar
- 3 ozs Whipped cream
Preparation steps
Rinse berries, trim and sort. Puree berries in a blender with lemon juice and strain through a sieve. Mix yogurt in a bowl with powdered sugar. Whip cream in a bowl until stiff. Mix puree with yogurt mixture and then fold in whipped cream. Pour mixture into small individual ramekins or popsicle molds. After about one hour add popsicle sticks, if desired. Leave in the freezer for about 2 hours total.
Take out of the freezer about 5 minutes before serving and remove from the ramekins or molds.
