1 tsp vanilla extract
1 egg
½ cup butter (melted)
¾ cup plain Yogurt
1 ¾ cups all-purpose flour
1 tsp Baking powder
¾ cup Almond flour
1 cup Cherries (pitted & halved)
½ cup chopped Cashews

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in a 12 hole muffin tin.
2.
Mix together the sugar, vanilla, egg, butter and yoghurt.
3.
Sift the flour and baking powder into a mixing bowl. Add the almonds.
4.
Stir in the egg mixture and mix quickly. The mixture will be lumpy. Stir in the cherries and cashews.
5.
Spoon into the paper cases and bake for about 20 minutes until risen and golden. Place on a wire rack to cool completely.
