- For the muffins
- 2 ¾ cups self-rising flour
- ¼ tsp salt
- ½ cup caster sugar (scant)
- 1 cup plain Yogurt
- ⅜ cup sunflower oil
- 2 eggs
- ½ cup chopped Walnut
- 11 ozs red Plum (pitted and thinly sliced)
- To decorate
- powdered sugar
- coarse Sugar crystal
Preparation steps
1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Grease 12 muffin cups.
2.
Sift the flour and salt into a mixing bowl. Add the sugar, mix well and make a well in the centre.

Whisk together the yoghurt, oil and eggs until smooth.
4.
Slowly stir the mixture into the dry ingredients until just combined. Stir in the walnuts.
5.
Spoon the mixture into the paper cases to almost half fill them. Top with some of the sliced plums and cover with the remaining mixture. Place the remaining plums on top.
6.
Bake for about 15 minutes, until golden brown and risen. Cool in the cups.
7.
Sift a little icing sugar over the tops and sprinkle with sugar crystals.
