1 bottle Red wine (0.75 l)
6 cloves
2 Cinnamon stick
125 grams sugar
2 firm Pear
30 grams Walnut
2 sprigs Lemon balm

Preparation steps

1.

Split vanilla pod lengthwise, scrape seeds into a pot and add the pod, pepper, red wine, cloves, cinnamon and sugar. Bring to a boil and then reduce to about half. Peel pears, slice in half lengthwise and remove core.

2.

Add pears to sauce and simmer gently on low heat for 5-8 minutes on each side. Place pears in a bowl. Pour sauce through a sieve and pour over pears. Marinate everything for at least 24 hours.

3.

Serve with walnuts and garnish with lemon balm.
