400 grams Rhubarb
1 lemon
300 grams sugar
600 milliliters mineral water
to garnish
2 mint
1 untreated lemon

Preparation steps

Rinse and trim the rhubarb, then cut into pieces. Squeeze the juice from the lemon. Bring the sugar and 150 ml (approximately 5 ounces) of water to a boil. Reduce the heat and simmer for 5 minutes. Add the rhubarb and lemon juice to the syrup, and cook for 10 minutes until the rhubarb is soft.

Remove from the heat, cool, and pass through a fine strainer lined with cheesecloth. Squeeze the rubarb, making sure to extract all of the liquid. Cool the liquid completely. Pour into bottles, and fill with the mineral water. Garnish with mint leaves and lemon slices, and serve.
