- 1 ⅔ cups Brown rice
- 1 Grapefruit (filleted, juice retained)
- 1 tsp brown sugar
- 4 Tbsps sesame oil (light)
- 2 carrots (finely sliced)
- 2 Red onions (coarsely diced)
Preparation steps
1.
Add the rice to twice the volume of water, add 1/2 tsp salt and simmer for around 40 minutes until cooked.

Mix the grapefruit juice with the sugar and the oil, and season to taste with salt.
3.
Drain the rice and allow to cool until lukewarm. Mix with the grapefruit, carrot, onion and dressing. Divide between bowls and serve garnished with spring onions, dill and coriander.
