- 500 grams Rice noodles
- salt
- 2 Red Bell pepper
- 2 Tbsps vegetable oil
- 1 organic lemon (Juice and zest)
- freshly ground peppers
- 4 Tbsps breadcrumbs
- 4 Tbsps butter
- 1 tsp Matcha
- 1 Matcha (for garnish)
Preparation steps

Cook the rice noodles in boiling salted water until al dente.

Trim the peppers, rinse, cut in half, remove seeds and ribs and cut into strips. Sear in a hot pan in oil. Remove from the heat, drizzle with lemon juice, season with salt and pepper and let rest.

Mix the lemon zest with the breadcrumbs and 2 tablespoons butter in a small pan and cook light golden brown.
4.
Melt the remaining butter in a hot pan. Add the drained pasta with a little cooking water and the matcha while swirling. Season with salt, lemon juice and pepper and distribute in bowls. Place the strips of pepper with the lemon breadcrumbs on top and serve sprinkled with a pinch of matcha.
