1 lemon, juiced and zested lemons
50 grams raisins
1 Tbsp Margarine

1 Tbsp cornstarch

Preparation steps

Rinse dried fruit and soak for at least 4 hours. Bring milk seasoned wti salt to a boil and add rice, simmer for about 15 minutes and remove from heat, let cool. Separate eggs. Whisk egg yolks with 50 grams (approximately 1 2/3 ounces) of sugar until fluffy. Rinse and pat dry lemon. Grate zest from half of a lemon and peel the other half thinly. Add lemon zest, rice and raisins to egg yolk cream. Beat egg whites until very stiff and fold into the rice mixture.

Grease pudding ramekin with margarine and sprinkle with breadcrumbs. Spread rice mixture in it and place into a pan filled with water (pudding ramekin should be standing in water up to 2/3). Simmer for about 50-60 minutes. Combine dried fruit and their soaking water with remaining sugar, remaining lemon pel and cinnamon. Squeeze lemon juice and add to the mixture, simmer for about 25 minutes. Mix cornstarch with a little water and add to dried fruit mixture to thicken it. Remove pudding from the pan and let rest for about 5 minutes. Invert  onto a plate and drizzle with a little dried fruit compote. Serve accompanied by the rest of dried fruit compote.
