½ organic lemon (juice and zest)
1 sm can Mandarin orange (175 grams, drained)
250 milliliters Buttermilk
50 milliliters Tangerine juice
100 milliliters Whipped cream
150 grams Arborio rice
1 Tbsp sugar
1 sour Apple

Preparation steps

1.

Drain mandarin oranges (tangerines).

2.

In a saucepan, combine buttermilk, tangerine juice and cream. Bring to a boil. Add Arborio rice, lemon zest and sugar. Cover and simmer over low heat, about 20 minutes. 

3.

Rinse, peel and cut apples into eighths. Cut out core, slice thinly and sprinkle with lemon juice.

4.

Stir apple slices and half of the drained mandarins into the rice pudding. 

5.

Divide rice pudding between two bowls and garnish with remaining mandarins.
