1 chicken (about 5 lbs, washed and cut into pieces)
kosher salt (to taste)
freshly ground Black pepper (to taste)
2 Tbsps chopped, fresh Chives
2 Tbsps chopped, fresh thyme
1 Tbsp Chervil
2 Tbsps chopped, fresh parsley
1 Tbsp chopped, fresh Tarragon
2 garlic cloves (finely chopped)
3 tsps finely grated lemon zest
¼ cup extra-virgin olive oil
1 yellow pepper (chopped)
1 Pumpkin (about 3 lbs peeled, cleaned and chopped)

Preparation steps

Preheat an oven to 450°F.

Season the chicken liberally with the salt and pepper.

In a small bowl, stir together the chives, thyme, chervil, parsley and tarragon. Transfer half of the herb mixture to another small bowl and set aside. Add the garlic, lemon zest and olive oil to the remaining herb mixture and coat the chicken pieces all over with the mixture.
4.
Place the chicken in a baking dish and add the pepper and pumpkin, and transfer to the oven. Bake until the skin of the chicken is well browned about 45 minutes.
5.
Remove from the oven and let rest a few minutes. Sprinkle the reserved herbs over the top to serve.
