1 kilogram trimmed Cutlet (pork)
2 Tbsps olive oil
2 tsps grated Lemon peel
2 fresh rosemary
4 fresh bay leaves
6 thyme
2 bay leaves
250 milliliters Beef broth
250 milliliters dry white wine
4 Tomatoes
400 grams shallots
1 garlic clove
2 tsps Coriander
1 pinch Ground clove
salt
freshly ground peppers

Preparation steps

1.

Peel shallots and cut in half lengthwise.

2.

Cut garlic bulb transversely once.

3.

Rub the meat with pepper and brown on all sides in a casserole in hot olive oil, then remove.

Sauté shallots and garlic in the drippings, remove and set aside.

Place the meat back in the casserole, pour in the broth and the wine and season with bay leaf, coriander, cloves and salt. Add the herbs, cover and stew in a preheated oven (180°C, approximately 350°F) for about 1.5 hours.

Blanch tomatoes, peel and cut into quarters.

7.

After 1.5 hrs, add the onions, garlic and tomatoes and cook an additional 30 minutes.

8.

To serve, cut the roast into slices and put them back into the pot. Baste with some sauce and serve garnished with fresh herbs.
