1 ½ kilograms Crookneck pumpkin
3 onions
3 Tbsps chopped parsley
2 slices white bread
4 Tbsps milk
600 grams mixed Ground meat
1 egg
salt
freshly ground peppers
6 Tbsps olive oil
5 Tbsps balsamic vinegar
1 Tbsp sugar

Preparation steps

1.

Peel pumpkin flesh, remove seeds and cut into wedges. Peel onions. Dice half of the onions and slice remaining onions. 

2.

Remove crust from bread. Coarsely chop and sprinkle with milk. Knead with diced onion, egg and 1 tablespoon parsley. Season with salt and pepper. Form about 12 meatballs and sprinkle with olive oil.

Combine remaining olive oil, remaining parsley, onion slices, balsamic vinegar, sugar and 1/2 teaspoon salt. Drizzle over pumpkin and arrange on a baking sheet. Add meatballs and bake in an oven preheated to 200° c (approximately 350°F) for 30-40 minutes. 

4.

Plate pumpkin and meatballs. Season with salt and pepper and serve.
