500 grams Pumpkin
2 ripe Apple
1 shallot
butter (for the roasting dish)

Preparation steps

1.

Preheat oven to 180°C (approximately 350°F). Rinse turkey, pat dry and rub inside and out with salt, pepper, thyme and sage. Halve the pumpkin, remove seeds and fibers with a spoon, peel and cut flesh into small cubes.

Peel apples, quarter, core and dice small. Peel shallot, chop finely and mix with pumpkin and apple cubes. Fill turkey with mixture, close with kitchen string and place in a buttered ovenproof dish.

3.

Bake in preheated oven for 1 1/2 to 2 hours. Baste often with drippings. Serve garnished with fresh herbs.
