Roasted Garlic Chicken

- 2 sprigs rosemary
- 3 sprigs thyme
- 1 garlic clove
- 2 lemons (juiced)
- 100 milliliters olive oil
- freshly ground peppers
- 1 ⅕ kilograms chicken (breasts and legs)
- 2 bay leaves
- salt
Preparation steps
Rinse rosemary and thyme, pat dry, strip leaves and chop finely. Peel 2 cloves of garlic and chop finely. Mix lemon juice, garlic, herbs and olive oil in a bowl. Season well with pepper. Baste chicken pieces with herb-garlic marinade, add bay leaves, cover and refrigerate about 1 1/2 hours.
Turn the chicken pieces once while the chicken marinates.
Preheat the oven to 200°C (approximately 400°F).
Season the marinated chicken pieces with salt and add with half of the marinade to a baking dish. Remove remaining garlic cloves from the bulbs, crush slightly and add to the dish.
Bake in preheated oven on the second rack from the bottom until crispy, about 45 minutes. Turn the chicken pieces over occasionally to coat with a little marinade.
Take the finished chicken from the oven and serve with rice or potatoes, if desired.
