- 2 garlic cloves
- 200 grams Chili sauce
- 1 Tbsp medium hot Mustard
- 100 grams liquid honey
- 50 milliliters vegetable oil
- 2 ½ kilograms cured pork loin (with rind)
- 400 grams mixed Lettuce
- 3 Tbsps White vinegar
- salt
- freshly ground peppers
- 1 generous pinch sugar
- 3 Tbsps olive oil
Preparation steps

For the roast, separate the garlic and very finely chop.
Preheat the oven to 150°C (approximately 300ºF).
For the seasoning, combine the chilli sauce with the mustard, honey, the oil and the chopped garlic and mix well. Cut the rind on the ham into diamond shapes and rub the ham with about half the seasoning mixture.

Place in the oven and cook for about 3 hours. Repeatedly coat with the remaining sauce.
Meanwhile, trim, rinse and shake dry the salad leaves.
Mix a dressing with the vinegar and oil and season with salt, pepper and sugar.
Arrange the salad on a plate, drizzle with the dressing and serve the ham on top.
