700 grams potatoes

100 grams Whipped cream
4 Tbsps butter

Preparation steps

For the pork: Preheat the oven to 200°C (approximately 390°F).

Season pork with salt and pepper, place in a roasting pan, add 1 cup of hot water and put in oven. Roast for about 30 minutes, then reduce heat to 160°C (approximately 320°F). Cover and simmer 30 minutes. Uncover and bake for another 30 minutes. Baste occasionally with pan juices. Brush with salt water and increase heat to 220°C (approximately 430°F).

For the potatoes: Peel and rinse potatoes. Cut into small pieces and boil in salt water until tender, about 25 minutes. Drain and evaporate over low heat. Add butter and cream and mash with a potato masher. Season with salt and pepper.

Remove pork from oven, slice and plate with mashed potatoes. Serve garnished with strips of blanched scallions.
