- 4 cups low-sodium Chicken broth (or vegetable)
- 1 Tbsp olive oil
- 2 cloves garlic cloves (finely chopped)
- ½ cup onions (chopped)
- 1 ½ cups uncooked Arborio rice
- ½ cup dry white wine
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 cups Arugula (washed and trimmed)
Preparation steps

In a small saucepan, bring the broth to a simmer (do not boil). Keep broth warm.

Heat oil in a large skillet, over medium heat. Add garlic and saute until fragrant. Add onion and Arborio rice; saute about 5 minutes. Add wine, salt and pepper; cook until the wine is almost absorbed, stirring frequently. Add the warm broth 1/2 cup at a time, stirring constantly. Keep adding broth 1/2 cup at a time, until each portion is absorbed, about 20 minutes total). remove from heat and gently stir in the arugula, reserving a handful for garnish.

Check seasoning. Divide between bowls. Garnish with arugula. Serve.
