- 1 kilogram Rolled lamb roast
- salt
- peppers
- 2 Tbsps olive oil
- 2 onions
- 100 grams Smoked bacon (well mixed)
- 250 grams Cherry tomatoes
- 6 fresh garlic cloves
- 250 milliliters dry white wine
Preparation steps
Rinse the rolled lamb, pat dry, and season with salt and pepper. Heat olive oil in a roasting pan and fry the rolled lamb in it until brown. Take out the rolled lamb from the pan and set aside.
Peel the onions and dice. Cut the bacon into strips. Fry the onions and bacon in the same roasting pan. Rinse and peel the tomatoes. Peel and halve the garlic. Add the tomatoes and garlic to the bacon in the roasting pan and pour the white wine. Add the fried rolled lamb and place the roasting pon in a preheated oven. Roast at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 1.5 hours. Baste the lamb in between with the gravy and pour some water if needed.
Finally, season with salt and pepper and cut the lamb into slices. Serve the lamb slices with the bacon sauce. Serve with fried potatoes as desired.
