28 ozs Rose hip (deseeded)
1 cup sugar (scant)
cup Orange juice
1 unwaxed lemon (peel and juice)
1 stick cinnamon
1 cup Pectin (scant)

Preparation steps

1.
Put the hip flesh in a saucepan with the sugar and leave overnight.

The following day, bring the rosehips to the boil with 150 ml water. Add the orange juice and simmer for around 15-20 minutes, stirring occasionally, until soft.
3.
Add the lemon peel and juice, cinnamon and jam sugar and simmer for a further five minutes. Pass the jam through a coarse sieve into a saucepan.
4.
Bring to the boil and pour immediately into jars that have been rinsed with hot water. Seal tightly. Stand the jars on their lids for approx. 15 minutes, then turn the right way up and leave to cool completely.
