24 ozs cooked Turkey (rotisserie turkey works well)
salt (to taste)
freshly ground Black pepper (to taste)
Mayonnaise (to taste)
3 scallions (cleaned and chopped)
½ red Bell pepper (rinsed; trimmed and diced)
½ yellow Bell pepper (rinsed; trimmed and sliced thinly into 2-inch strips)
6 Flour tortillas (10-inch)
1 handful shredded Lettuce
fresh Fruit to serve (raspberries, apple slices, pineapple, etc. )

Preparation steps

1.
Shred and chop the cooked turkey and place in a medium bowl. Season to taste with salt and pepper. Fold in enough mayonnaise to just hold the shredded turkey together, or to personal taste. Add spring onions and red and yellow peppers, stir to gently incorporate.

In a large skillet, set over medium-high heat, blister the tortillas one at a time on both sides. (This step is optional)

Spoon the turkey salad over the bottom third of the tortillas. Sprinkle with shredded lettuce. Fold the tortillas over the turkey salad, and roll up as tightly as possible.
4.
Wrap in plastic wrap or wax paper and chill in the refrigerator for at least 30 minutes. When ready to serve, cut each wrap in half and serve with fresh fruit.
