- 2 bunches Soup vegetables (leek, carrot, celeriac, parsley root )
- 1.333 cups potatoes
- 2 cups dried, brown Lentils
- 1 bay leaf
- 1 tsp dried thyme
- 6 cups Meat stock (or vegetable stock)
- 1 onion
- ⅔ cup smoked, fatty Bacon
- 1 Tbsp clarified butter
- paprika (noble sweet)
- 2 Tbsps Vinegar
- 1 tsp Mustard
- 3 Tbsps chopped parsley
- salt
- freshly ground Black pepper
- parsley (to garnish)
Preparation steps

Trim and rinse the soup vegetables, peel if necessary and dice very finely. Peel and rinse the potatoes and cut into 1 cm cubes. Rinse the lentils in cold water in a sieve and put into a pan with the vegetables, potatoes, bay leaf, thyme and stock. Bring to the boil and simmer for 30-40 minutes.

Peel and dice the onion. Dice the bacon. Heat the clarified butter in a small frying pan and slowly fry the onion and bacon over a low heat. Then dust with paprika and fry briefly.

Add the bacon mixture to the lentils and reheat briefly.

Stir the vinegar, mustard and parsley into the stew and season to taste with salt and pepper. Ladle into bowls and serve sprinkled with parsley.
