60 grams butter
2 Tbsps vegetable oil
2 Tbsps Pastry flour
l white wine
1 l Beef broth
1 bay leaf

100 grams Mountain cheese (grated)
1 Tbsp parsley (chopped)

Preparation steps

Peel onions and cut into strips.

Heat butter and oil in a cast iron pan. Add onions and cook over medium-low heat, stirring occasionally until golden-brown, about 15 minutes. Sprinkle onions with flour and deglaze with white wine. Add broth and bay leaf and bring to a boil. Simmer about 5 minutes. Season generously with salt, nutmeg, and pepper. Remove bay leaf.

Under a preheated broiler, broil bread, watching carefully, until golden-brown. Ladle soup into bowls. Place toast on soups, sprinkle with cheese and broil until toasts are golden-brown, 4-5 minutes. Serve immediately, sprinkled with parsley.
