200 grams mixed Berry (such as red currants, strawberries)
½ organic lemon
Lemon peel
4 egg yolks
4 Tbsps dry Marsala wine
4 Tbsps sugar

Preparation steps

1.

Rinse berries, pat dry and remove from stems. In a bowl, mix and sprinkle with lemon juice. Pour fruit into dessert glasses and refrigerate.

2.

In a small round stainless steel bowl mix together 4 egg yolks with 4 tablespoons sugar and a little lemon zest over a pot of hot (not boiling) water with a whisk.

3.

Add 4 tablespoons marsala, mix and beat over low heat to make a frothy cream. Pour over fruit and serve immediately.
