200 milliliters lukewarm milk
40 grams melted butter

Preparation steps

Rinse and peel the potatoes, then cook for 25-30 minutes in boiling water. Rinse and dry the potatoes. Remove half of the leaves and finely chop. Drain the potatoes and let them dry. Mash with a potato masher, and mix with the milk and butter until smooth.

Season with salt, pepper, nutmeg, and saffron. Divide into preheated bowls, and garnish with the chopped tarragon.
