- 3 eggs
- 4 ozs lamb's lettuce
- 10 ozs small Cucumber
- 1 bunch Radish
- ½ bunch scallions
- 4 ozs Strawberries (or other seasonal fruit)
- 2 Tbsps olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp honey
- salt
- peppers
- dried thyme
- 4 ozs Feta
- 4 ozs shrimp (pre-cooked; from refrigerator)
- 2 slices Whole Wheat Bread
Preparation steps
Boil eggs in boiling water for about 6 minutes and let them cool down.
Meanwhile, clean, wash and dry lamb's lettuce. Clean, wash and slice the cucumber, radishes and spring onions. Clean, wash and finely dice the strawberries.
Whisk olive oil with vinegar and honey and mix with the strawberries. Season with salt and pepper and thyme.
Peel and halve the eggs. Crumble feta cheese. Mix salad with cucumber, radish slices, spring onions, spread shrimp and feta cheese on top. Place eggs on the salad, drizzle with dressing, and serve with bread.
