2 Chicken breasts (each 200 grams)

200 milliliters organic Chicken broth
100 grams Snow peas
350 red Oak leaf lettuce
150 grams green Bell pepper
1 ripe Mango
4 scallions
2 Red chili peppers
3 Limes
8 Tbsps toasted sesame oil
½ tsp liquid honey

2 Tbsps chopped Peanuts (unsalted)

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Rinse chicken breasts, pat dry and season with salt. Pour chicken broth in a small baking dish, add chickens breasts and poach for 30-40 minutes in the preheated oven.

Rinse snow peas, snip ends and blanch in a pot of boiling salted water for 3-4 minutes. Drain and cut in half in cold water.

Rinse oak leaf lettuce and spin dry. Rinse bell peppers, cut in half, remove seeds and ribs and cut into strips. Peel mango and cut fruit into thin slices from the core. Rinse scallions, trim and cut into rings. Rinse chile peppers, cut in half, remove seeds and finely chop.

Remove chicken from the baking dish and cut into slices.

Squeeze juice from lime. Mix lime juice in a bowl with sesame oil, honey and salt.

Arrange lettuce into four bowls, add snow peas, bell pepper pieces and mango slices. Add chicken slices on top of each bowl, sprinkle with scallions, chile peppers and chopped peanuts. Spread the dressing on top and serve immediately.
