16 ozs dry Spaghetti
salt
1 Zucchini (rinsed and trimmed)
2 Tbsps olive oil
1 clove garlic cloves (peeled and finely chopped)
1 ¼ cups smoked Salmon (thinly sliced)
1 cup fresh Mozzarella (drained and diced)
freshly ground Black pepper (to taste)
2 Tbsps chopped Chives

Preparation steps

Cook the spaghetti in a pot of salted boiling water according to package instructions until al dente.

Meanwhile, cut the zucchini into very thin strips. Heat the oil in a skillet set over medium heat. Saute the zucchini strips for about 3 minutes. Add the garlic and saute until fragrant, about 45 seconds.

Toss the drained pasta with the zucchini and garlic. Add the salmon and mozzarella. Season to taste with salt and pepper and transfer to a large pasta bowl. Sprinkle with chopped chives and serve.
