2 cups smoked Salmon
1 Tbsp Old Bay seasoning
1 ¼ cups coarse Bread crumbs flour
3 Tbsps butter (melted)
0.333 cup Celery (rinsed; trimmed and finely chopped)
4 fresh scallions (rinsed; trimmed and finely chopped)
2 fresh eggs (beaten)
2 Tbsps lemon juice
Canola oil (for frying)
salt (to taste)
freshly ground Black pepper (to taste)

Preparation steps

Drain salmon and place in a mixing bowl. Carefully remove any bones and skin; gently flake with a fork. Add Old Bay seasoning, bread crumbs, melted butter, celery, scallions, eggs and lemon juice. Stir ingredients until just combined and chill in the refrigerator for 30 minutes.

Spoon some of the salmon mixture into a 1/4-cup measuring cup and gently pack down. Unmold and press with clean hands to form a 2-inch wide patty. Place salmon patties in a single layer on a parchment lined baking sheet. Chill for at least 1 hour in the refrigerator.

Add the oil to a 12-inch skillet to a depth of 1/2-inch. Heat the oil over medium-high heat until the oil registers 325º F on a deep-fry thermometer. Working in batches, transfers salmon patties using a metal spatula, to the skillet and cook, turning once, until golden brown, about 5 minutes.

Drain croquettes on clean paper towels. Repeat process until all the croquettes are cooked. Season to taste with salt and pepper. Serve.
