- 5 cups floury potatoes (peeled and diced)
- ⅔ cup Mayonnaise
- 2 Tbsps fresh mint (chopped)
- lemon juice
- 2 egg yolks
- 2 ½ Tbsps butter
- 1 tsp hot Mustard
- 1.333 cups Salmon fillet (chopped)
- ⅔ cup Parmesan (grated)
- 2 Tbsps fresh Lemon balm (chopped)
- Nutmeg
- all-purpose flour (as required)
- For the coating
- 4 Tbsps all-purpose flour
- 1 egg (beaten)
- 1 ½ cups fresh breadcrumbs
- vegetable oil (for frying)
Preparation steps
1.
Cook the potatoes in salt water for around 20-25 minutes until fork-tender.

For the Dip: Whisk together the mayonnaise and the mint and season with a dash of lemon juice.

Drain and mash the potatoes and stir in the egg yolks, butter and the mustard. Add the salmon, Parmesan, and the lemon balm and season with salt, ground black pepper and nutmeg. If the mixture is too soft and not pliable, work in some more flour.

Remove a little of the mixture – approx. 1 tbsp – and shape into oval balls. Roll in the flour, drag through the beaten egg and roll in the breadcrumbs. Do this with the entire mixture and then fry the croquettes in hot oil for 4-5 minutes until golden brown.
5.
Pat dry with paper towel and serve with the mayonnaise.
