1 Tbsp Onion powder
1 Tbsp garlic powder
1 Tbsp sugar
1 Tbsp sweet paprika
½ tsp salt
¼ tsp Black pepper
4 fresh Salmon fillet (110 g | 4 oz each)
olive oil (for brushing)
12 button Mushrooms (cleaned and sliced)
For Salad and Dressing
2 Tbsps extra virgin olive oil
1 Tbsp balsamic vinegar
2 tsps Dijon mustard
5 cups fresh Baby greens

Preparation steps

In a small bowl, combine chili powder, onion powder, garlic powder, sugar, paprika, salt and pepper. Set aside 1 1/2 tablespoons to be used in salad dressing. Rub dry seasoning mix on all sides of the salmon fillets. Cover and refrigerate for 3 hours or overnight.

Preheat broiler or grill until hot.

Brush fillets with olive oil and place on broiler pan or grill. Cook about 3 to 4 minutes, depending on thickness of the fillet. Turn and cook for an additional 4 minutes, or until salmon is opaque.

Brush mushroom slices lightly with olive oil and broil just until golden brown.

In a small bowl, combine olive oil, vinegar, Dijon mustard and reserved dry seasoning; mix well. Divide lettuce, salmon and mushrooms between plates. Drizzle with dressing. Serve.
