3 large, fresh eggs
1 ½ cups half and half cream
13 ozs cooked Salmon (skin and bones removed)
¾ cup shredded Cheddar cheese
¾ cup Swiss cheese (grated)
1 cup frozen peas (drained well)
1 Tbsp unsalted butter
1 small sweet onion (peeled and finely chopped)
1 clove garlic cloves (peeled and minced)
1 tsp fresh thyme
¼ tsp Dry mustard
1 tsp kosher salt
freshly ground peppers (to taste)
1 Tbsp fresh, finely chopped Dill
1 unbaked Pastry shell thawed if frozen (9-inch)

Preparation steps

Preheat oven to 350º F / 180º C. Position oven rack in the center of the oven.

In a large bowl beat eggs well; add half-and-half and beat again. Flake salmon and stir into the egg mixture; add cheeses and peas, stir and set aside.

In a small skillet over medium heat, melt the butter and saute the onion until slightly softened, about 4 minutes, stir in the garlic; cook for 30 seconds or until fragrant. Remove from heat. Add the onion mixture, thyme, dry mustard, salt and pepper to the salmon and cheese mixture; mix to thoroughly incorporate.

Pour the salmon mixture into the pastry shell. Sprinkle dill over the top. Bake for 40 to 45 minutes, or until quiche has set. Remove from oven and cool on a wire rack for 10 minutes before slicing. Serve with a side salad, if desired. Can be served warm or cold.
