Salmon with Arugula and Fava Beans

The arugula and fava bean mixture go great on a variety of meats, including poultry.

- 2 Tbsps olive oil
- 1 red chili pepper (seeded and sliced)
- 2 skinless Salmon fillet
- 2 cups plain Yogurt
- ½ lemon (juiced)
- 1 clove garlic cloves (minced)
- ¼ tsp caster sugar
- Chives
- 1 cup Fava bean (shelled)
- 1 cup purple salad
- 3 cups Arugula
- salt
- freshly ground Black pepper
Remember to pick through the salmon for any pin-bones before serving.
Preparation steps
Preheat a grill or grill pan to medium high. Whisk together the olive, chile, and seasoning in a shallow bowl. Add the salmon and coat in the oil.
Grill for 7 - 8 minutes, turning once, until the flesh is firm yet springy to the touch.
Blend together the yogurt, lemon juice, garlic, sugar, chives, and seasoning in a food processor or a blender to make a quick dressing.
Arrange the fava beans, purple salad leaves, and arugula in bowls. Flake the salmon and place on top, serving with the yogurt dressing on the side.
